Hi! I'm Jason, a Ph.D. candidate at Cornell University studying food science. My work looks at the intersection between diet, obesity, taste biology, the microbiome, and the immune system. My undergraduate background is in microbiology and biochemistry, with my degree coming from Penn State. I'm also the CEO of a food technology startup, Antithesis Foods, where we use cutting edge food science to make better-for-you versions of crunchy snacks. I love podcasts, books, cycling, writing, history, and video games. I'm a curious person who loves getting into the weeds of a topic and loves learning new things alongside other curious people. I've learned a good deal about a broad range of subjects and hope to pass that along to mentees and to learn new things from you!Project ideas
The best diet for weight loss
Obesity is a major health crisis in the developed world. What does the science say is the diets that can help subjects lose weight most effectively? We'll read reviews, scientific papers, figures out pros and cons of each, and make recommendations to combat one of the biggest public health challenges of this centry.
Product Development Innovation
What is the blank space in an industry where new products can be developed to fill a consumer need? We'll scour product review websites and understand what consumers are looking for. At the end of this project, we'll have done a competitive analysis of a product / market landscape and be able to describe the white-space need to build a new solutions.
Do probiotics actually do anything?
We'll learn about what probiotics are, their role in food, health, and if they are actually useful at improving health. This project will combine microbiology, food science, and food marketing to parse truth from fiction.
