Bio

Food systems contribute to one third of greenhouse gases emitted globally, and food system driven climate change is one of the most pressing issues of this and future generations. My academic interests lie at the intersection of gastronomy and climate change. How can we eat in a more delicious way that is also more suitable for our climate? What lessons can we adapt from natural systems to build more innovative future food systems? My personal experience comes from years spent living all over the world being immersed in a variety of ways of eating. I'm curious about the sociological factors that contribute to someone's engagement with their own food system and the idea that we all have become willingly or unwillingly seperated from where our food comes from. I have a variety of experience in some of the best restaurants all over the world including Blue Hill at Stone Barns and Restaurant Kadeau in Denmark. Fun Fact: I've eaten in over 30 countries! My favorite place I have ever visited is a tie between Laos and the Republic of Georgia.

Project ideas are meant to help inspire student thinking about their own project. Students are in the driver seat of their research and are free to use any or none of the ideas shared by their mentors.

Sustainable Meal Alternatives

Analyze a local food system within your community, like your high school, your religious community, or even a local eating establishment. Measure and analyze the potential sources of greenhouse gas emissions from the ingredients in a specific dish. Design an alternative to this dish using your understanding of the social and environmental components of eating.

Teaching experience

I've been teaching since 2014 when I held my first teaching job working with university students studying English in China. Since then I've worked with a variety of students preparing for university in various ways, but primarily through college essay prep and test prep. I take each student individually and holistically and come up with a system that works for them.
